Tasty Paleo Meal - 'Avoquiche'


Here's a fairly simple and delicious paleo style meal.

INGREDIENTS

  • 1 Avocado

  • 1 ring of red capsicum

  • A few baby spinach leaves

  • 1 Egg

  • 1 small handful of ham

  • Cracked pepper & rock salt to taste

METHOD

  • Slice Avocado in half, remove seed and take out about half the avocado flesh with a spoon

  • Chop up spinach leaves, capsicum & ham

  • Crack egg into mixing bowl & add other ingredients. Mix well

  • Carefully pour mixture into the 2 avocado halves

  • Place on baking paper/tray

  • Cook in oven (I used fan forced/grill) at 180-200 degrees or until top of mixture becomes golden brown and treat is cooked through

  • Serve with mixed salad and garnish to taste. Can be eaten warm, or cold.

  • Enjoy your gluten free, dairy free, high protein and healthy snack!
