YUM!!! Strawberry Date Cake recipe


  • 2 eggs

  • 80 grams oil (I recommend coconut oil, butter or olive oil)

  • 1tbspn rice milk

  • 1tspn vanilla essence

  • ½ cup raw sugar

  • ¾ cup almond meal

  • ¾ cup s/r flour or alternative spelt flour with 1 tspn baking powder

  • 1 cup grated carrot

  • 1 cup warmed chopped dates

  • 1 cup stewed or tinned apple

  • 1 cup warmed strawberries, chopped


NOTE; for those who don't use a thermo... style kitchen machine, use traditional methods to chop, warm and blend ingredients

  • Chop & warm dates (in thermo… machine, speed 1, temperature 60, time 1 minute). Place aside in a bowl

  • Blend eggs, oil, rice milk & vanilla essence (in thermo…. machine @ speed 4, time 10 seconds)

  • Add sugar, flour & almond meal (blend in thermo... machine @ speed 2-3, time 1 minute)

  • Add apples, dates & carrot (blend in thermo... machine @ speed 2-3, time 20 seconds)

  • Pour mix into lined cake tin

  • Add warmed, chopped strawberries to top of cake

  • Cook in oven @180 degrees for 50-60 minutes

Serve warm, with whipped coconut cream if desired (method below)


  • Refrigerate 1 can of full cream coconut cream for 24 hours

  • Open can, scoop off coconut cream layer at top of can

  • Blend or whisk coconut cream for 2-4 minutes until fluffy (add Maple syrup, honey, Guava nectar or other sweetener as desired)
